How's it actually carved, like is this one person doing it by hand?
Honestly it's families, not a factory. Same carving families in Bethlehem my dad built relationships with years ago. One thing I noticed when I'm packing these is that the detail on the baby's hands is where you can really tell the time went in, some of them you can see individual fingers and it's barely an inch of wood. I keep one on my shelf at the shop and it still catches me sometimes.
